Veg Steaks

  • Green Cabbage
  • Chard
  • Mushrooms
  • Avocado
  • Olive Oil
  • Curry Powder
  • Cayenne Pepper
  • Pinch of Salt

Slice your head of cabbage into sections about 1.5 inches thick, cover a cookie sheet with large pieces of chard and place your cabbage slices on top along with crimni or baby bella mushrooms. Drizzle olive oil and season all of it with curry powder, salt and cayenne pepper. Pop the cookie sheet in the oven for 25 minutes at 400 degrees, or until it’s slightly browned.

I plated this with half of an avocado.

I had cabbage left over and I had added a large portobello to the cookie sheet to be baked with the rest of my dinner, which all went in the fridge over night. The next day for lunch I made a sandwich with the large, cooked but cold portobello and cabbage. Kind of a little veg steak sandwich!

  • Cooked & Refrigerated Cabbage
  • Mixed Greens
  • Tomato
  • Served with Salted Plantain Chips

Fajitas

  • Yellow Bell Peppers
  • Yellow Onion
  • Garlic
  • Cumin
  • Paprika
  • Chili Powder
  • Corn Tortillas
  • Kale
  • Tomato
  • Avocado
  • Hot Sauce

Saute up those peppers, garlic and onion in olive oil, cumin, paprika and chili powder. Warm your corn tortillas in a damp towel in the microwave, and chop your kale, tomatoes and avocado for your side salad. Add hot sauce… As always.

Black Bean & Portobello Tacos

  • Corn Tortillas
  • Canned Black Beans
  • Baby Portobellos
  • Onion
  • Garlic
  • Cumin
  • Chili Powder
  • Paprika
  • Pinch of Salt
  • Greens
  • Tapatio

Slice and dice everything to small pieces, the smaller the better… Start in a fry pan by sautéing the garlic and onion in a bit of olive oil and salt, add the baby bellas, cumin, paprika, and chili powder. I do not hold back on the spices! Once everything is browned add the black beans and hot sauce (if you want). Throw your corn tortillas in a wet towel in the microwave to gently warm. Add some greens, cilantro and hot sauce when you serve it up, or whatever toppings you like with your tacos!

Kale Salad

Add or subtract ingredients however you want!! I mix my salads up all of the time depending on what I have in the house.

  • Purple Kale
  • Cucumber
  • Tomato
  • Half of an Avocado
  • Raspberries
  • Hummus
  • Sriracha

If you need a little sauce, try this dressing

  • Olive Oil
  • Balsamic Vinegar
  • Garlic
  • Lime
  • Pinch of Salt

Put it in the bullet or food processor!
