Guacamole on Roasted Sweet Potato


Ummm this little number is ridiculous.

I made up a big batch of these bite sized for my sisters bridal shower a few weeks ago, and decided to do a fuller version of them today.

I had a very large sweet potato that I sliced into 3/4in rounds, leaving the skin intact. I coated the slices in olive oil and a spice blend consisting of

  • paprika
  • sea salt
  • celery salt
  • onion powder
  • garlic powder
  • coriander
  • cumin

and roasted them at 375 degrees for about 15 minutes. While those were in the oven I threw together the guacamole:

  • 2 small avocados
  • 3 inches of chopped up cucumber
  • large pinch of ciantro
  • 2 green onion choppped
  • sea salt

mash all of that together and pile it high atop the sweet potato rounds.

The purple garnish is a roasted beet I robbed from my other food prepping endeavor, chopped up and sprinkled on top.
