Let’s Talk About Quinoa


I am learning to love the stuff… It took a while, I hate waiting for things to cook, especially when I am on lunch and have no time to wait around! My favorite summer, on-the-go, lunches are with pre cooked, chilled quinoa.

I like to cook up a fair amount of quinoa in the rice cooker and keep the leftovers in the fridge for food on the run.

Here we have got:

  • 1/4 cup cold, cooked red quinoa
  • Romaine lettuce
  • Half of an avocado
  • Grape tomatoes
  • Raw pumpkin seeds

I whipped up a quick dressing with a fork and ramekin dish using

  • Olive oil
  • Red wine vinegar
  • Dried ginger
  • Turmeric
  • Garlic Powder
  • A pinch of salt

I chuck all sorts of things on cold quinoa. Spring Greens, fresh salsa, seeds, beans, sprouts, or whatever you have in the fridge.

A delicious 5 minute meal.
