Is corn on the cob the best?! Is summer my favorite season?!  Yes and yes.

I LOVE falafel. I love it. I love corn on the cob. I love wraps. I love food.

I was shocked to find out how many of my family and friends have never had falafel!! It’s hard to recreate some of the deliciousness I have had on my travels, but we did our best!

***For the wandering vegan, falafel is usually an easy choice if you can find a Donair or gyro shop. Just make sure to ask about the dressings! A lot of traditional recipes call for tzatziki dressing which contains yogurt. If they have tahini sauce, that usually does the trick (vegan style) or ask for hummus.***

Falafel balls

  • 1 can chick peas (drained and patted dry)
  • Fresh Parsley
  • Green onions
  • Cumin
  • Salt and Pepper
  • Coriander
  • Garlic
  • Flour

Throw all of this in your blender minus the flour, add flour little by little until it’s all blended into a doughy consistency.

Ball and fry them up in a bit of oil, they go fast so keep them moving!

I tossed these beauties in a vegan, organic flour tortilla shell I warmed in a pan, with a little romaine, avocado, cucumber and dressed the whole wrap with some tahini dressing.

  • Tahini
  • Almond Milk
  • Lemon Juice
  • Nutritional Yeast
  • Salt
  • Black Pepper

I always go for some chili sauce on a good ole falafel wrap! And my corn has a bit of olive oil and salt and pepper.

Oh my, so yum!
