Black Bean & Portobello Tacos


  • Corn Tortillas
  • Canned Black Beans
  • Baby Portobellos
  • Onion
  • Garlic
  • Cumin
  • Chili Powder
  • Paprika
  • Pinch of Salt
  • Greens
  • Tapatio

Slice and dice everything to small pieces, the smaller the better… Start in a fry pan by sautéing the garlic and onion in a bit of olive oil and salt, add the baby bellas, cumin, paprika, and chili powder. I do not hold back on the spices! Once everything is browned add the black beans and hot sauce (if you want). Throw your corn tortillas in a wet towel in the microwave to gently warm. Add some greens, cilantro and hot sauce when you serve it up, or whatever toppings you like with your tacos!
